For my Astra H 2.0L Turbo, Opel recommends both 5W30 & 5W40 - up to now I have used 5W30, but a mechanic recently told me that, to reduce oil consumption on older motors, he always goes for 5W40.

How does this trade off with the "use 5W30 for turbos" recommendation?

Your mechanic does not understand oil viscosity then. 5w/40 would not reduce oil consumption over 5w/30.
It would simply maintain viscosity better at much higher temperature ranges. But here in the UK it would make no difference at all. In Texas or Dubai, yes maybe.

All the vauxhall / opel engines of this era are 5/30 DEXOS2 grade.

Cheap hint. The SAAB Turbo oil is the same GM DEXOS2 oil, and you can get the genuine stuff right here for 拢20.
